This Instant Pot Italian Beef recipe could NOT be any easier! Just dump all of the ingredients in your Instant Pot and press go! Come back an hour later and the beef will be absolutely fork tender. We love serving the shredded beef on buns, but it would also be delicious with mashed potatoes.
Oh man, I am reallllllly dragging tonight, so I’m going to make this post short and sweet. Well, savory. But you know what I mean.
Soren got up at 5 this morning, which is pretty typical of him, but then he didn’t go back to sleep, which is definitely atypical. His usual schedule is to sleep from 7 p.m.-5 a.m. then he wakes up, feeds, and goes back to bed until 6:30/7 a.m. I could do without that 5 a.m. feeding but it’s fine for now. Except, yeah. Today he didn’t go back to sleep.
Getting up at 5 a.m. isn’t too unusual for me, but I think the reason I feel so tired is because I didn’t get any solid sleep until about midnight. Wanna know what kept waking me up? A coyote! A freaking coyote.
Our new house is right across from a nature preserve and while our neighbor told us a pack of coyotes live in it, I honestly didn’t believe him. I figured it was one of those rumors that got started that had no truth behind. Well, sure enough, a dang coyote was howling away last night for at least an hour and since our window was open, I heard it all. So did Maddie. Neither of us were happy campers.
Ugh, anyways! Crossing my fingers for an early bedtime tonight!
Are you ready for the easiest Instant Pot recipe EVER?! I mean, I know they’re all pretty simple but seriously, this Instant Pot Italian Beef is a no brainer and only has FOUR ingredients. Seriously an easy recipe!
You just throw a hunk of beef, some Italian dressing mix, beef broth and pepperocini peppers in the Instant Pot and let it do it’s thang.
Once the Italian beef is fork tender after about an hour, you just shred it up and load it onto some toasted hoagies and top it with cheese. We also like to spoon some of the juices on top for an little extra oomph in our Instant Pot Italian Beef Sandwiches. You could even put some in a little side dish to dip it in. SO good!
We will definitely be putting this Instant Pot Italian Beef on our regular rotation this fall and winter! I’m actually thinking of making it into a freezer meal, because why the heck not!?
