Mornings are a breeze when you prep breakfast the night before… Raspberry Overnight Oats are healthy and filling!
Last week at a spinning class, the instructor was looking for some breakfast ideas on days she teaches in the morning. It was interesting to hear what everyone liked to eat in the morning. Some people preferred yogurt or cereal, while some liked something more substantial like eggs, bacon, and toast.
My suggestions were overnights oats and avocado toast, like the millennial I am. When I mentioned overnight oats, the girl next to me was super intrigued. She couldn’t believe that I ate oats cold, and had a really hard time wrapping her head around the concept.
Overnight oats have been a breakfast staple of mine since grad school, when I needed a filling and healthy breakfast in between my morning workouts and class. I love oatmeal, but I couldn’t make it when I went straight from the gym to school. Overnight oats were the answer to that problem, and I’ve been making them ever since.
My go-to combination is oats, almond milk, chia seeds, cinnamon, and a dash of salt. In the morning I melt together some honey and peanut butter and swirl it in, topped with some banana or frozen berries. It’s filling and super tasty.
I wanted to switch things up a little bit, and these Raspberry Overnight Oats hit the spot!
The base of the recipe is pretty much the same as my go-to recipe, with oats, chia seeds, and almond milk, but I also added a spoonful of raspberry jam. Then instead of the peanut butter and bananas, I layered it in the morning with some fresh raspberries.
To round it out, these would be delicious with a sprinkle of almonds, walnuts, or pecans on top for some crunch and added protein. Of course I thought of this after I took photos, but luckily before I ate it. I think it would also be delicious with a drizzle of almond butter too!
The layered oats and raspberries made it feel like a parfait, which made breakfast feel super fancy y’know? I loved this change from my typical overnight oats game. These raspberry overnight oats will definitely become a regular in my rotation – especially once berries are back in season!
