When it comes to grilling recipes, I think the easier they are, the better.  These Turkey Burgers with Blueberry Compote and Goat Cheese might sound fancy, but they are SUPER easy!

The secret is using pre-made turkey burgers.  I love using Jennie-O Seasoned Turkey Burgers because they're super versatile and can be topped with just about anything.  Guac and queso?  Yep.  Pesto and mozzarella?  Delish.  Good 'ol ketchup, mustard, lettuce, tomatoes, and pickles?  Of course.

Today, however, we're topping them with blueberry compote and goat cheese.  Like I said, it might sound fancy but I assure you, it's really very simple!  Really the only prep that needs to be done is making the blueberry compote.  This can be done a day or two in advance, making this a very quick weeknight meal.  The compote is made just of blueberries, balsamic vinegar, garlic, and maple syrup.  You bring it to a boil, let it simmer until reduced a little, for about 10 minutes, and then let cool.

I'm just gonna throw this out there that I *know* the combo of blueberries and goat cheese on a turkey burger might sound a little strange.  How did I even come up with that?! I'll admit, it's not an original idea. A couple of years ago we ate at a place in my hometown with a burger and a chicken sandwich both topped with blueberry compote and goat cheese.  That's when I fell in love with the combination.  It's part sweet, part tangy, and completely delicious.

Marc was pretty skeptical, too, when I told him what was for dinner on turkey burger night.  His review, however, was nothing but praise.

This recipe is great to jazz up the plain old burger and bring some fun into your summertime grilling!

Turkey Burgers with Blueberry Compote and Goat Cheese

Ingredients

For the Blueberry Compote:

  • 1 pint blueberries washed
  • 1 large clove garlic minced
  • ¼ cup balsamic vinegar
  • 1 tablespoon maple syrup

For the burgers:

  • 4 Jennie-O Seasoned Turkey Burgers
  • 4 pretzel buns or regular sandwich buns
  • baby spinach
  • 4 ounces crumbled goat cheese

Instructions

To make the blueberry compote:

  • Combine blueberries, garlic, balsamic vinegar, and maple syrup in a small saucepan over medium heat.
  • Bring to a boil and slightly crush the blueberries with a spatula.
  • Simmer for 10 minutes, until the sauce is slightly thickened. Remove from heat and let cool.

To make the turkey burgers:

  • Cook turkey burgers to your liking. I made ours on the grill but you can also make them on the stovetop or broiler.

To assemble:

  • Place a handful of baby spinach on bottom of each pretzel bun and top with turkey burger.
  • Top turkey burger with a couple of spoonfuls of blueberry compote and crumbled goat cheese.
  • Top with other half of pretzel bun and serve.
  • Enjoy!
