Along with being pasta salad season, I’d say it’s now officially grilling season too! It’s been in the high 80’s and low 90’s here in the Twin Cities the past few days and, while I am not complaining in the least of the warm temps, it has me really dreading cooking in my kitchen.
We tried to hold out and keep the A/C off, hoping the breeze flowing through the house would keep us cool, we had to draw the line when Lars woke up from his nap the other day drenched in sweat.
To say I felt bad is an understatement and immediately we flipped it on.
Obviously it’s days like these when cranking up the oven is the last thing I want to do. Thank God for the grill! While we’ve made brats and burgers a couple of times so far this summer, these Steak Fajita Kabobs are the real “recipe” that I’ve tested so far. I have to say, we are starting grilling season with a bang!
These were super good! While I’m not typically the biggest fan of bell peppers, I love them grilled, especially when they get charred a little. These are definitely bell peppers that I will eat!
These Steak Fajita Kabobs really are a meal in itself, but you could definitely serve them in tortillas like regular fajitas. I think they’d be great with rice too.
I also made some grilled sweet potato wedges to go along with them, which is another recipe that is coming soon! Grilling season has just begun!
