Pretty much every week I try to bake/make a healthy snack that we can rely on when Marc, Lars or I are in urgent need of food or a quick breakfast. Some weeks its my Homemade Peanut Butter Chocolate Chip Lara Bars, and others its my No Bake Peanut Butter Chia Oat Bars. During the fall and winter months I always turn to my Pumpkin Chocolate Chip Oat Bars and Chocolate Chip Gingerbread Oat Bars.
P.s. anyone else notice that the majority of my health snacks have chocolate in them? No shame in that game.
These Dark Chocolate Banana Oat Bars are no exception. Dark chocolate chips are a MUST in these. Unless you’re one of those weirdos that doesn’t like chocolate chips in their banana bread. In that case, go ahead and leave them out or use walnuts instead. I’ll just be over here rolling my eyes 😉
I’m only kidding. I just feel pretty strongly about chocolate chips in my banana bread, and now apparently in my banana oat bars as well.
I have to say, I have attempted making a banana oat bar that was not only healthy, but also delicious, a number of times. So many times I have been disappointed. They were either too dry, too crumbly, bland, or too healthy tasting.
Finally, FINALLY I have found the one! These Dark Chocolate Banana Oat Bars are everything I wanted them to be. They’re hearty and full of oats but tender and moist. They’re also lightly sweetened with honey and the bananas lend to some natural sweetness as well. Of course the dark chocolate chips don’t hurt either.
It’s safe to say my search is over – this recipe is the one I will be making over and over!
