I made these Strawberry Cheesecake Mousse Cups for Valentine's Day dinner, which we actually had with a few friends. We re-named it Palentine's Day dinner. It's like the Valentine's Day version of Friendsgiving, ya follow? I thought it was pretty clever.
We decided that cooking a nice, semi-fancy meal for five people is WAY more fun than for just two people. This way the work was divided, we didn't have a ton of leftovers, and we could sample multiple wines. It just makes sense y'know?
For dinner, we made herb butter ribeyes, mushroom risotto, Sriracha roasted brussels sprouts, and salad. I happily offered to bring dessert and my original inclination was to bring something chocolate. But then Marc suggested strawberry mousse and I couldn't think of anything more perfect to make.
To make the strawberry mousse super simple, I used cream cheese which made it sort of into a cheesecake-like flavor, hence the cheesecake in the name. I also added a graham cracker crust to the bottom and top to make it even more cheesecake-like.
I would say these were definitely a hit! Aside from me, everyone finished theirs down to the last spoonful. And I'm blaming my second helping of risotto for filling me up too much to finish my dessert. Shame.
