Are we cool with two dessert recipes in a row?  Awesome.

I made these Strawberry Cheesecake Mousse Cups for Valentine's Day dinner, which we actually had with a few friends.  We re-named it Palentine's Day dinner.  It's like the Valentine's Day version of Friendsgiving, ya follow?  I thought it was pretty clever.

We decided that cooking a nice, semi-fancy meal for five people is WAY more fun than for just two people.  This way the work was divided, we didn't have a ton of leftovers, and we could sample multiple wines.  It just makes sense y'know?

For dinner, we made herb butter ribeyes, mushroom risotto, Sriracha roasted brussels sprouts, and salad.  I happily offered to bring dessert and my original inclination was to bring something chocolate.  But then Marc suggested strawberry mousse and I couldn't think of anything more perfect to make.

To make the strawberry mousse super simple, I used cream cheese which made it sort of into a cheesecake-like flavor, hence the cheesecake in the name.  I also added a graham cracker crust to the bottom and top to make it even more cheesecake-like.

I would say these were definitely a hit!  Aside from me, everyone finished theirs down to the last spoonful.  And I'm blaming my second helping of risotto for filling me up too much to finish my dessert.  Shame.

Ingredients

For the graham cracker crust:

  • 1 cup graham cracker crumbs from 1 sleeve of graham crackers
  • 3 tablespoons butter melted
  • 1 teaspoon sugar

For the strawberry cheesecake mousse:

  • 2 cups fresh strawberries stems removed
  • 1 cup heavy whipping cream
  • 16 ounces of cream cheese
  • cup powdered sugar
  • 1 teaspoon vanilla
  • additional chopped strawberries for garnish

Instructions

For the graham cracker crust:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine graham cracker crumbs, butter, and sugar, and stir well to combine.
  • Press into the bottom of an 8x8" baking dish.
  • Bake in preheated oven for 10 minutes, or until lightly golden.
  • Let cool.

To make the strawberry mousse:

  • Place strawberries in a blender and puree until very few chunks remain.
  • In a bowl with electric mixer, beat heavy whipping cream until stiff peaks form. Set aside.
  • In a separate bowl with electric mixer, beat cream cheese with powdered sugar until fluffy, about 2 minutes.
  • Slowly add strawberry puree, beating until well combined.
  • Add vanilla, and beat until combined.
  • Fold in whipped cream.
  • Evenly divide the graham cracker crumbs between your serving cups, reserving a few tablespoons for garnish.
  • Evenly distribute the strawberry cheesecake mousse between serving cups.
  • Top with strawberries and additional graham cracker crumbs.
  • Serve and enjoy!
