These Thanksgiving Leftovers Enchiladas are a fun and delicious way to use up the rest of your Thanksgiving leftovers!
I'm just gonna pop in once this week since I'm pretty sure everyone is focused on one thing and one thing only. Thanksgiving.
Hopefully by now your menus are set (but if not check out all of the recipes I posted last week for Thanksgiving week!), and you have everything you need for the stuffing, the cranberry sauce, the green bean casserole, the mashed potatoes, and of course, the turkey and gravy!
But do you know what you're going to do with all the leftovers?! I have *the* tastiest idea for you today! Thanksgiving Leftovers Enchiladas.
Now, these aren't the leftovers with actual enchilada flavors. It's the concept of enchiladas, but with all the flavors of Thanksgiving leftovers.
Essentially, you pack in all of your leftovers into flour tortillas, cover them with leftover gravy and cheese, and bake until they are bubbly and cheesy.
Basically, they're the opposite of a Thanksgiving detox. But those leftovers aren't gonna eat themselves, y'know?! The kale salad can wait until Monday!

We had thanksgiving early this year due to my children's conflicting football schedules. They were so pumped when I told them we were having turkey enchiladas instead of a traditional turkey. They were so bummed to bite into one these enchiladas and find canned green beans and instant mashed potatoes. I think next time I wont use Hungryman dinners as the main component!
