Happy Saturday! We are headed up to the cabin this weekend where the temps are supposed to be super mild (in the 70’s!) which will be perfect hiking weather and a great break from the heat we’ve had here in the Twin Cities.
As always, your healthy meal plan is ready to go for you – complete with a printable grocery list! One note – we decided to take out vegetarian options for all of the recipes, as we no longer have any vegetarian bloggers in our meal plan group and we wanted to expand the options for meat entrees that are difficult to be made vegetarian. Still, most dishes can be made vegetarian!

Prep Ahead: The BBQ sauce may be made in advance and the pineapple may also be prepped ahead.

Prep Ahead: the quick pickled veggies should be made at least a day in advance. The pork marinade can be made in advance.

Prep Ahead: you can grill the chicken ahead of time and then assemble the wraps when ready to eat.

Prep ahead: Freeze your ripe bananas beforehand. You can peel and break them into pieces, or slice them up. Throw them into a zip top bag and freeze!

Prep Ahead: Chop vegetables ahead of time. You can prepare the dressing ahead of time too.
