Avocado Tuna Melts are made with avocado mayo and have avocado slices for maximum avocado consumption! Are there any foods that you buy at the grocery store pretty much every week? Like you don’t even have to put them on your list because you automatically buy them.
For me, it’s bananas, almond milk, sweet potatoes, sandwich bread and avocados.
The bananas and almond milk go together because smoothies and overnight oats are breakfast staples. Sweet potatoes are always a great quick dinner or side dish. And avocados and sandwich bread for (what else?) avocado toast. #basic.
While avocados are a staple in my grocery store runs and diet, I am relatively new to trying avocado oil and absolutely new to trying avocado mayonnaise.
I was a little skeptical when I first tried Chosen Food’s Avocado Mayo, but it has a lot going for it – clean ingredients, non-GMO, made with cage-free eggs, and made with pure avocado oil. So many things to love about it AND it really tastes great! So great that Marc requested these tuna melts two days in a row!
These tuna melts have avocado allllll over them. First, I made the tuna salad with avocado mayo. Winning. Then I put some more avocado mayo AND slices of avocado in the sandwich. Double winning. and THEN I did my favorite grilled cheese trick and slathered avocado mayo on the outside instead of butter before I grilled it up. All around winning.
Paired with a side salad, these were perfect for a filling and healthy lunch. The tuna salad alone is delicious but along with the avocado and melty cheddar cheese, they totally hit the spot!
