A healthy weekly meal plan with vegetarian options and a printable grocery list!
Yeahhhh it’s the weekend! I’m particularly excited for this weekend because today I am heading up to Duluth for a girls day and night with some friends which will officially be my first night without Lars since he was born! Hellooooo full night of sleep! I’m also slightly nervous and anxious about it all, too, but I know he is in GREAT hands with his nana.
I can tell we are transitioning from winter to spring because all of the dishes we chose for this week’s meal plan are more on the veggie-centric and lighter side, as opposed to the comfort food, soups, and chili’s we were having the past few months!

Sriracha Peanut Tofu Stir Fry from greens & chocolate.
Prep Ahead: You can press the tofu in advance and combine the ingredients for the sauce in advance. Other than that, this comes together very quickly.
You can also use ~1-1 1/2 pounds of diced boneless skinless chicken breast instead of tofu, if you prefer.

Prep Ahead: This meal comes together very quickly but you can save time by slicing the peppers and cutting the chicken in advance. Also, make sure you have the rice cooked in advance.
Vegetarian option: You can omit the chicken and replace it with tofu or an additional vegetable such as broccoli.
