Oats, flaxseed, coconut, and almond butter are the stars in these little snacks of health!
This week I was talking to a couple of coworkers of mine about how often we clean our houses. Never known as the tidiest person, I wasn’t surprised to hear that I cleaned my house the least frequent out of us. What I was surprised to hear was how often the others were cleaning. One lady deep cleans her bathrooms at least twice a week! Is it just me or is that a little cray-cray? I mean, I give our counters a little wipe down every couple of days, but the toilet? Every couple of weeks. And the shower? Every few weeks.
Oir kitchen, on the other hand, is cleaned pretty well just by default since I make a mess in it so often. so it all evens out, right? Maybe? Eh, oh well. The way I see it, life is too short to have a perfectly clean house all of the time. At least that’s what I’m telling myself.
This got me thinking about other house “rules” like how long certain foods should last in the refrigerator. While I pretty much stick to the rules when it comes to meat and dairy, there are some things that I really don’t listen to the suggested storage time. Like cookies? I’ll eat them a couple weeks later. I’ll rescue a bunch of kale that most would probably toss. And these energy bites? I ate them three weeks in even though the suggested storage time was one week.
I’m still kickin’ it (and so is baby!) so I’m pretty sure the “lasts up to one week in the refrigerator” warning that usually goes along with homemade granola bars is just made up by someone who wants to cover their butt in the case of the person who tries to eat one two months later.
The fact that there are still some left has nothing to do with their appeal. These ‘lil guys are tasty! Since they are filled with oats, flax, almonds, coconut oil, and almond butter, they definitely pack a punch and are super filling. So while I thought I would snack on 3-4 at a time, I find myself being satisfied after just a couple.
These definitely hold up way better in the refrigerator than room temperature, due to the addition of coconut oil. Since coconut oil is a solid when cold, it really helps to bind all of the dry ingredients together, and when they are at room temperature, they tend to fall apart easier. That said, I recommend chilling the “dough” for about 30 minutes before forming them into bites, so they are somewhat firm but not too firm when rolling.
