SURPRIIIIIIISE! If you can just imagine right now, a room of smiling food bloggers, each holding a dessert for a surprised mother-to-be, that’s what’s going on. A surprise virtual baby shower for Madison from Espresso and Cream!
I don’t know about you, but baby fever is in full swing with my friends and family. It seems like every week I find out another friend is expecting a bundle of joy, and I couldn’t be happier! It’s so much fun to have other women to talk about pregnancy symptoms, cravings, maternity clothes, and preparing for baby. `
While I’m so happy for all of my expecting friends, there’s something extra exciting about a couple who has struggled with infertility that is finally having their dreams come true. My friend Madison had a rough road to where she is now (expecting her little one SO SOON!) and has been really open on her blog about her and her husband’s struggles. She delves right into the heartache, the agony, the waiting, and the countless medical appointments she has had, and she just makes you want to reach across the computer screen and give her a big hug. I really appreciated all of her valuable posts while starting our own journey of trying to have a baby, as I didn’t know if we would have similar struggles, but I knew if we did I wouldn’t be alone. Her posts, along with talking to her through emails really eased my mind about such unknown territory for me. She is such a sweet heart.
So of COURSE I was excited when I found out about a surprise baby shower for Madison! Her shower is a dessert theme, and I couldn’t help but make miniature cupcakes for it. Since Madison and her husband are waiting until the baby is born to share the gender, I also wanted something with a gender neutral color. This is how I dreamt up these Mini Orange Creamsicle Cupcakes.
One of my own recent pregnancy cravings has been citrus, so I was super excited about these. The cupcakes and buttercream are flavored with fresh squeeze orange juice along with orange zest, and are topped off with candied oranges that are not only pretty, but entirely edible. There’s orange flavoring in every nook and cranny of these cupcakes!
We absolutely loved these mini cupcakes – they’re light and fluffy with the perfect hint of orange and vanilla flavoring. Plus, it’s always fun when desserts are ‘mini’ right? It’s only too bad we couldn’t all get together in real life to celebrate Madison’s bundle of joy!
