Today’s post is a little different than the typical recipe post that you’re used to on greens & chocolate. Today I am stepping away from the recipes and giving you some tips on quick and easy weeknight meals that take less than 30 minutes to make. This time of year can get seriously jam packed with activities and holiday gatherings, and nothing is better after a busy day or week than coming home to a home cooked meal.

Sloppy Joe’s were a staple in my house growing up and they were served almost weekly for school lunches. Every now and then I get a huge craving for one, fluffy white bun and all. Being older and more knowledgeable about eating a well-rounded meal, I amp up my Sloppy Joe’s with a generous helping of grated carrots, onions, and finely chopped mushrooms. Cooking up a big batch of Sloppy Joe’s takes 25 minutes, TOPS, which is perfect timing to pop a pan of crinkle fries in the oven so they are ready to go when the Joe’s are. Nine times out of ten, when buying chicken breasts, I opt for chicken tenders. They cook up so much faster and almost more even, as they don’t have one thick end and a thin end. This makes them ideal for sandwiches, so one end isn’t super thick and the other is pretty much all bun, especially in these Chicken Club Sandwiches. Along with some thick cut bacon, I like to add some lettuce, avocado, tomatoes, and onions for a rounded meal. Of course I can’t have a chicken sandwich without sweet potato fries, and Alexia has *the best* sweet potato fries I’ve tried at home.
Next up – a fun twist on spaghetti night. Sometimes I crave Italian but making spaghetti yet again just isn’t going to cut it. That’s when I came up with these Italian Nachos. I started with some Italian sausage and onions, and made a red meat sauce. While the sauce was cooking I whipped up a pan of my favorite Alexia Waffle Fries, which I topped with the meat sauce. Along with a heaping handful of mozzarella cheese and I’m pretty sure we’ll never go back to spaghetti nights!
Sometimes I think there’s a 10 year old boy hiding inside of my husband’s body. He has a soft spot for mini tacos and fish sticks, and I just love him for it. Instead of the store-bought fish sticks, I make mine homemade (they’re EASY!) and along with roasting some carrots, I threw a few Alexia Onion Rings on the baking sheet too. Another quick and easy weeknight meal in the books with this one!
Even though steaks might seem fancy, they are really not a lot of work! I like to marinate mine all day in a simple mixture of olive oil, garlic, Worcestershire, and chopped onions, and all I have to do when I get home is throw ’em in a skillet (or on the grill when it’s not 10 degrees outside) until they are cooked to perfection (medium rare, please!). Steaks and fries (Alexia’s Sweet Potato Fries for me!) are a classic restaurant pairing, and I love making the “fancy” dinner at home in less than 30 minutes.
