I guess being sick of leftovers + lunch rut + bacon +potatoes + cheese = this baby kale salad with roasted potatoes, BACON(!!), and blue cheese vinagirette. So yeah, let’s go with that.
So um, how about this baby kale? Adorable, right? Maybe that’s just because anything that is ‘baby’ or ‘mini’ anything is automatically cute but seriously – I just want to coo and make funny faces at this baby kale all the live long day because it’s so cute.
Aside from being cute, baby kale is also very different the grown-up adult version. It’s much less chewy and more tender, making it easier to be used in salads. Overall I’d say it’s more appealing to those who aren’t fans of the more well-known curly kale because of it’s chewier nature, but still packs the same nutritional punch. Yeah baby kale!
Combined with crispy roasted potatoes, bacon, and blue cheese, this is a salad to transform any salad-hater (gasp!) into a kale lover. Excuse me, baby kale lover. I went ahead and tossed it all with a blue cheese vinaigrette, which is a much lighter version of a true blue cheese dressing. Since baby kale is more delicate than curly kale, I thought a regular blue cheese dressing would be a bit too heavy. I ate this for lunch but it would also be a great side salad at dinner.
