Is the day after Christmas super depressing or what? I just want to throw a little (okay, a big) I’m-sad-and-mad-that-Christmas-is-over tantrum! Plus, there’s all that wrapping paper to be cleaned up and dishes to be done and we all know how I feel about cleaning and dishes. Plus, there’s no extra reasons to eat cookies. Wah.
I suppose on the bright side there’s another fun holiday within a week and so there’s another reason to be with friends and get your par-tay on. Another highlight for us coming up is the 3rd annual cabin weekend which we leave for TODAY! Which means we have a weekend full of cross country skiing, snow shoeing, sauna-ing, hot tubbing, cocktails, and FOOD! Okay, I’m not sad anymore about Christmas being over.
Since we’re over Christmas and onto New Years, I have a fun and tasty NYE appetizer for you today. I made these roasted olives for a pre-Christmas dinner appetizer and I was shocked at how fast they went. I saw the idea for citrus roasted olives when I was out Christmas shopping and stumbled into an olive oil store. They had some of their products out for tasting and one of them was citrus olives. They were so good that I bought a jar of their mixed olives so I could make them myself at home.
These are super easy to make and if you like olives, you will love them. They would be perfect for a new years eve appetizer or just for a pre-dinner snack. The citrus flavor isn’t too overpowering, but surprisingly complements the olive flavor perfectly. I added a dash of crushed red pepper to them, so they have a little bit of a kick. The roasting really deepends the flavors of not only the olives but the citrus and rosemary as well. I would also recommend using non-pitted olives, as they have more flavor with the pits and they’re more fun to eat that way.
And with this recipe, I’m calling it quits for 2013. We’re staying at the cabin through new years day so I’ve decided to take a full out break from work and the blog. Don’t worry – I’ll be back in 2014! Happy New Year!
