If I’m ever in a bind for what to make for lunch or dinner, there’s a good chance my meal will consist of some sort of roasted vegetable and a sandwich. To me, a sandwich is the perfect meal. It can be filled with essentially anything, is quick to make, and fills me right up. While I’m not one to turn down a good PB&J, I do like to switch it up every once in awhile.
One thing I haven’t mentioned is that I like my sandwiches ‘saucy’ meaning I don’t skimp on the condiments. I love the sauciness that a good mayonnaise can add to a sandwich, but I don’t love the excessive calories it can add. I mean, 200 more calories just for a couple of globs of mayo? No thanks. I do like a good dijon mustard, but sometimes the flavor can become quite overpowering if I add too much.
Ladies and gents, it looks like I have found my sandwich match made in heaven: Hidden Valley’s new Sandwich Spreads. They come in fun flavors like Oven Roasted Parmesan Garlic, Smoked Bacon Ranch, Country Herb Ranch, and my personal favorite Spicy Chipotle Pepper. Not only are the flavors delicious, but there are made of cream cheese and white beans, and clock in at only 35 calories in 1 tablespoon of the spread. Take that 90-calorie mayo!
When Hidden Valley asked me to create a sandwich using one of their new spreads, I knew right away that I would be using the Spicy Chipotle Pepper flavor for my creation. Marc and I both love anything that is chipotle flavor and this spread did not disappoint. It is perfectly spicy (for our wimpy taste buds, anyway!) and and has great chipotle flavor. I used the spread to create a chicken salad, and added to it red bell pepper, red onion, cilantro, and green onions. Instead of making a traditional sandwich, I decided to make it a wrap with some extra-large tortillas that we had. I topped the chicken salad with some lettuce and lots of cheese and grilled them up in our panini press. You could also make these on the stovetop in a skillet but if you have a panini press I’d definitely recommend using that.
We both loved this wrap and the Spicy Chipotle Pepper sandwich spread is definitely a new favorite of ours! Marc even claimed he could eat one of these wraps for lunch every day. The recipe below makes enough for 4-5 wraps, depending on how big your tortillas are and how much filling you add to each tortilla. You could definitely serve these cold as well, but we loved eating them warm with the cheese all melted.
