Favorite Superfood Pasta: Pasta with Walnut Pesto, Sausage, and Broccoli Rabe. I can only imagine how yummy the walnut pesto is, and with the sausage and broccoli rabe this is bound to be a nutritious and filling meal! Superfoods: walnuts and broccoli rabe.
Favorite Superfood Soup: Red Lentil Coconut Soup. I am in love with lentils and don’t eat them nearly enough. They are so versatile, tasty, and good for you. This recipe makes me crave soup even now that it’s summer! Superfood: Lentils.
Favorite Superfood Salad: Grilled Kale Salad with Beets, Figs, and Ricotta. Holy cow am I excited to try this recipe. I mean grilled kale?! Gotta try it. And beets?! AND figs and ricotta?! Salad heaven. Superfoods: Kale, Beets.
Favorite Superfood Dessert: Chocolate Avocado Pudding. This is one that I need to taste to believe it… But creamy avocado with coconut milk and cocoa powder?! I’m pretty sure I’d be on board. Superfood: Avocados.
Favorite Superfood Breakfast: Asparagus and Smoked Salmon Eggs Benedict. I’ve never met an eggs benedict that I didn’t like…this variation with smoked salmon and asparagus looks delicious! Superfoods: Eggs and Salmon.
Favorite Superfood Cocktail: Kiwi Mojito. On a hot afternoon, one of these could take care of quenching my thirst, happy hour, AND my daily dose of vitamin C! Superfood: Kiwi.
