With such a gloomy week last week with my grandma’s passing and the fr-fr-frrrrreeeeezing temps, we were in desperate need of something bright and cheery. I took advantage of a lazy morning to bake and thought, what is more cheery than citrus?
I’m not sure why, but I don’t do a ton of baking with citrus. Perhaps it’s because 99.999% of the time I am drawn to anything with chocolate, peanut butter, caramel, or brown butter, but after making this bread I really think I need to make some room in there for the oranges, lemons, and limes.
This bread is truly delicious. It is so soft and moist it could almost be considered a cake, but since it’s baked in a loaf pan and bread is acceptable to eat in the morning, let’s call it bread so we can eat it for breakfast. Mmmk? The addition of yogurt to the bread lends to it’s soft crumb, and also allowed me to cut back on the butter in the bread, making it slightly healthier and again, more acceptable to eat for breakfast.
