Corn on the cob is grilled, and then slathered with a cilantro lime butter, making it a perfect summer side dish!Corn on the cob is my absolute, number one, no-doubt-about-it favorite summer food. So when these few weeks in July come up when the sweet corn is bursting from every farmers field, I take full advantage and make the most of it. Meaning, I make it every night until Marc begs me to stop. Until recently, I have always cooked corn on the cob in boiling water but since I’ve tried grilling corn, I really can’t bring myself to do it any other way. Plus, I’m usually serving the corn with something else that’s grilled, so why even bother turning on the stove?
While I usually just slap on some regular butter and salt to my corn on the cob, I decided to jazz it up a bit one night when we had friends over for dinner. Since I already had cilantro and lime from my Mango and Avocado Salsa, I decided to do a cilantro-lime butter. I added cumin because really, why not? Let me just say…this butter is. so. good. Just when I thought grilled corn couldn’t get any better, this butter tops it off. Am I really surprised that butter makes something better? Of course not. But really it’s the tiny addition of the cilantro, lime, and cumin that makes it so tasty. Even more, it is super easy to whip up and could definitely be done days in advance and just kept in a sealed container in the refrigerator.
