I was sick last week and if there’s one thing you should know about me being sick is this: it ain’t pretty. Since I don’t get very often (I can’t even remember ever having the flu), I guess you could say I don’t handle it well. Even though I sucked it up and went to work with a throbbing head, scratchy throat, achy neck, and congested nose, the second I got home I was a huge 26 year old baby. As if Marc wasn’t tired enough of his sick patient’s, he got to come home to a whiny sick fiance. Lucky man he is.
Being sick, my appetite wasn’t raging as usual and I wasn’t too motivated to get in the kitchen, so these little guys came in handy. I had these for breakfast, snacks, and lunches throughout the week and they were perfect for boosting my energy. Plus, peanut butter was one of the few things I could actually taste. Win, win.
Peanut Butter Oat Bites
2 1/2 cups old fashioned oats
1/2 cup shredded coconut (I used sweetened but you can use unsweetened too)
1/2 cup chocolate chips
1/3 cup sunflower seeds
2 tbsp ground flaxseed
1 tsp salt (1/2 tsp if using salted sunflower seeds)
3/4 cup peanut butter
1/2 cup honey
1/4 cup coconut oil or vegetable oil
1 tsp vanilla
In large bowl, mix together oats, coconut, chocolate chips, sunflower seeds, flaxseed and salt. Set aside.
In medium bowl, whisk peanut butter, honey, oil, and vanilla until well combined. Pour into dry ingredients until uniformly mixed. Refrigerate for 30 minutes. This will make it easier to roll into balls.
Line baking sheet with parchment paper.
Once refrigerated, roll into 1-1 1/2″ balls using hands or cookie dough scoop. Place onto prepared pan and refrigerate another 20 minutes until set. Store in refrigerator or freezer. Enjoy!
