Mini Spinach and Feta Quiches
adapted from The Quinces and the Peas
makes 18 mini quiches
1/4 cup heavy cream
1 (10 oz) package spinach, thawed, drained, and squeezed dry
2 cloves garlic, minced
1/4 tsp nutmeg
1/2 tsp salt
1 cup crumbled feta cheese
2 sheets frozen puff pastry, thawed
Preheat oven to 425 degrees F. Spray mini muffin tin with cooking spray. Place thawed puff pastry on floured surface. Cut puff pastry into about 2″ squares and fit into mini muffin tin.
In large bowl, mix together the eggs, cream, garlic, nutmeg, and salt. Add the spinach.
Place about 1 tsp of the feta cheese in the bottom of each muffin then top with egg and spinach mixture.
Bake for 25-30 minutes in preheated oven, or until set. Let cool for 5 minutes. Enjoy!
