It’s that time of the month again! No, not that time of the month…it’s time for the unveiling of September’s Secret Recipe Club. This month I was assigned to Delicious Existence, written by Danielle who is a vegan social worker, who also has her certificate in holistic health counseling. I have to admit, I was a little intimidated when I first started looking through her recipes. I’m not even close to being a vegan, but she definitely makes vegan food look delicious.
I ended up choosing a fun fall recipe that I knew I would love. I’m a huge snacker throughout the day, especially on dry cereal and Teddy Grahams, so I loved that this recipe “spiced” up my normal snack mix. This recipe is definitely adaptable to whatever dry ingredients you have on hand, and I think it would also be delicious with pecans or any other type of nut mixed in.
Thanks, Danielle, for a yummy fall snack!
Pumpkin Pie Spiced Snack Mix
adapted from Delicious Existence
2 cups cinnamon cereal (such as Cinnamon Toast Crunch)
2 cups wheat Chex cereal
1 1/2 cups Teddy Grahams (I used Annie’s graham bunnies)
2 tbsp butter
2 tbsp brown sugar
1 1/2 tsp vanilla
1/2 tbsp pumpkin pie spice
In large saucepan or pot, melt butter over medium heat. Add brown sugar, vanilla, and pumpkin pie spice, and stir to combine. Add cereals and grahams and stir to coat evenly.
Dump onto parchment paper and let cool completely. Store in an airtight container.
