As a new member of The Secret Recipe Club, I was very excited to participate in my first month. The concept of the “club” is that every month, each member gets assigned to another member and their blog, and they get to choose a recipe to recreate. Fun, yes?! So while I was excited about my first month, I was even more excited when I found out I was assigned to Not Rachael Ray. Not Rachael Ray is an incredibly cute and entertaining blog (the pictures of her daughter are adorable!) written by a new stay-at-home-mom (who, ironically, was also a physical therapist) that loves to cook and bake. Rachel gave me so many delicious recipes to choose from that I kept going choosing a recipe to make, and then finding more and more that I wanted to make. I finally settled on this quinoa casserole because I love quinoa, and I am a sucker for anything “southwestern.” Even more reason to make it was that it is a “Not Rachael Ray original.”
I’m so glad I picked this to make! The quinoa gave it a nuttiness flavor and combined with the corn kernels, fresh cilantro, and crusty cheesy topping, it was absolutely delicious. I omitted the chicken Rachel had in her recipe because I didn’t have any, but I can see how it would really round out the casserole as a main dish. This casserole was super easy to make, healthy, tasty, and an all-around winner! Thanks Rachel for such a great recipe!
