2 1/4 cups warm water
2 tbsp sugar
4 1/2 tsp yeast
1 tbsp salt
2 tbsp canola oil
6 cups all-purpose flour
In a large mixer, combine the water, sugar, and yeast. Let sit for 5 minutes so it can proof.
Add the salt, oil, and 3 cups of the flour and mix with dough hook until combined. Add the remaining flour and mix again until combined. Let it sit for 10 minutes.
Stir the dough down and let it sit for 10 more minutes. Repeat until the dough has been stirred 5 times (takes about an hour)
Turn the dough out onto a floured surface. Knead 2 or 3 times, then divide the dough into 2 loaves. Roll each loaf into a 9×13″ rectangle, then roll the dough from the long sides and pinch the edges. I didn’t do this part because I simply don’t have enough counter space in my kitchen. I just plopped it onto the baking sheet.
Place on greased baking sheet, cover and allow to rest for 30 minutes. Preheat oven to 400 degrees F.
With sharp knife, make 3 gashes on top of each loaf. Bake 30 minutes, checking at 20 minutes to make sure it is looking good/not burnt.
