Cranberry Orange Mini Loaves

2 1/2 cups all purpose flour
2 tsp baking powder
1 tsp salt
1 1/4 cup granulated sugar
3 large eggs
zest of one orange
4 tbsp unsalted butter, melted and slightly cooled
1/4 cup vegetable oil
3/4 cup buttermilk
1 1/2 tsp vanilla extract
3/4 cup dried cranberries
Preheat oven to 350 degrees.
In medium bowl, combine flour, baking powder, and salt. Set aside.
In large bowl, whisk together the sugar, eggs, and orange zest until light and fluffy. Whisk in the melted butter and oil. Add the buttermilk and vanilla, and whisk until combined. Using a wooden spoon or spatula, fold in the cranberries.
Add the flour mixture to the wet ingredients, and stir until just combined. Don’t over mix! It will still be lumpy.
Using a spoon, divide the batter among 12 muffin cups (I used mini loaves, which made less than 12). The muffin cups should be about 3/4 full.
Bake in preheated oven for 16 to 18 minutes. Let cool.
