I’m a big fan of grilling out and all of the fun things that go along with it (like drinking beer, nice weather, being outside), but I’m not a big fan of actually “handling a grill”. I mean, I guess I’ve never tried it, but the whole propane tank just scares me.
So what’s a girl to do when she wants a juicy burger but is lacking the grilling skills? Make them on the stove top, of course!
Now, these are not just any plain ‘ol burger. These are lean turkey burgers filled with grated zucchini and carrots, topped with provolone cheese and chipotle mayo.
If that wasn’t enough, the burgers are sandwiched between toasted focaccia bread. Then topped with some fresh boston lettuce for some added crunch.
Served with some sweet potato fries and a side of the chipotle mayo for dipping. This makes a great meal for anyone who isn’t too keen on firing up the grill. Or someone looking for a healthier option than a beef burger.
The chipotle mayo isn’t the picture of health, but it can be made with low-fat mayo. I like to think there’s room for a little fat in every diet…everything in moderation!
