A few months ago I made a list of 100 things I want to challenge myself to baking(yes, I have a life…) and I was thinking yesterday how this blog is the perfect opportunity to document this! While some of the things on the list are pretty basic like Snickerdoodle cookies and brownies, a lot of them are meant to be a challenge and give me even more of a reason to try new things.
That said, it’s kind of ironic that I’m kicking off my Top 100 list with something, um, not so challenging.
Yes, I’m blogging about rice krispie treats. No, I’m not insulting your baking intelligence. These are not just any rice krispie treats. These are browned butter rice krispie treats. What exactly is browned butter, you ask? It is butter that is cooked over low heat until it is brown (again, not insulting your intelligence) and develops a more complex and nutty flavor. It has been showing up all over the blogworld in various goodies, one being rice krispie treats.
So is browned butter worth all the hype? Let’s just say I don’t think I will ever be able to eat a regular rice krispie treat again. I can’t wait to try browned butter in other things…maybe chocolate chip cookies? Perhaps banana bread? Apple crisp? As if I needed a reason to use butter more often…
Salted Browned Butter Rice Krispie Treats

1 stick unsalted butter
10 oz bag marshmallows
1/2 tsp kosher salt
6 cups Rice Krispies cereal (about half of a 12 oz box)
Line 8×8 baking dish with foil. Butter or spray the foil with baking spray.
To brown the butter:
Melt butter in large pot over medium-low heat. Make sure you are stirring often and stay with your butter the whole time…it can go from brown to burnt very quickly!
Here’s the process of turning regular butter into brown butter:
1. It will start to foam.
2. It will turn golden.
3. Finally, it will start turn brown and develop a nutty aroma.
Be patient…it took awhile for mine to finally turn brown but it was worth the wait!
Remove from heat when it turns brown so it doesn’t burn. Add your marshmallows to browned butter and stir to melt the marshmallows. Then add the salt and cereal and stir until evenly mixed. Spread into prepared pan and let cool. Cut into squares and say hello to browned butter. Life will never be the same.
