I made this for dinner over a month ago and I cannot figure out why I have waited so long to post about it! This dish was everything I could want in a meal: it was relatively simple to make, had intriguing ingredients, and turned out delicious!
I have never really craved pork like I would crave other meat like a juicy steak or flaky salmon filet but when I saw this recipe on Noble Pig, I was drawn to the shallot-fig reduction. Ever since trying a fresh fig at a farmer’s market stand last summer I have been wanting another reason to try them again. This was the perfect reason!
While the end product might look like it is the result of a complicated process, I promise you it is not! The dish came together so easily I was able to prepare the side dishes while the pork chops browned, the sauce reduced and then the pork chops finished cooking. This is one of those dishes that is easy enough to whip up on a week night, and also good enough to impress dinner guests.
Oh, and of course some roasted broccoli.
