Yesterday was my birthday and it was just my luck that I had an exam scheduled for the same day. This put me in quite the dilemma, as I had to make myself a birthday dessert, but I did not have the time to make a cake. Side note: I insisted that I make my own birthday dessert…Marc wanted me to make that clear so readers didn’t think he was a lazy boyfriend.
So, rewind to Monday afternoon…I’m at home, studying, and cannot get the fact that I’m not baking myself a birthday cake off of my mind. I knew I wouldn’t have time to make anything on my actual birthday, so it was now or never. Finally, I decided I would make something really quick because dang it, it was my birthday! And I’m a baker(well, I try to be)! It would be wrong for me not to make something!
Since the treats were for my birthday I decided to go all out and make something super rich and decadent. These bars are not for the faint of heart. The bottom layer is a dense, moist brownie, and it is topped with a creamy Nutella cheesecake. It was absolutely sinful and the perfect birthday dessert to treat myself to.
Brownie Bottom Nutella Cheesecake Bars
10 tbsp (1 stick plus 1/4 stick) unsalted butter, melted and slightly cooled
1/4 cup Nutella
2 large eggs
1 cup sugar
1 cup all purpose flour
1/4 cup cocoa powder
8 ounces cream cheese, softened at room temperature
3 tbsp sugar
2 large eggs
1/3 cup Nutella
Preheat oven to 325 degrees F. Line 9×9 square pan with foil. The original recipe said parchment paper but I was out. Also, I used an 8×8 pan because I was in a hurry and didn’t read the directions correctly.
To make brownie layer:
Whisk together butter, Nutella, sugar, and eggs in large bowl. Mix well. Add in flour and cocoa powder and mix until well combined. Pour brownie batter into prepared pan.
To make cheesecake layer:
Mix all ingredients with an electric mixer. Pour over brownie layer.
Bake for 40-45 minutes, or until cheesecake looks set. This is always hard because cheesecake is difficult to gauge, but even with the wrong size baking pan I baked mine for about 42 minutes and they came out fine. Make sure to cool completely before cutting into squares.
