Ahhh is Thanksgiving really NEXT week?! I’m not sure if it seems like it’s too soon to be Thanksgiving because we didn’t do any Friendsgiving celebrations this year, making the holiday feel like it snuck up on me, or if time is just flying with a newborn, but I seriously cannot believe it’s next week. I’m guessing it has to do with the fact that we’ve been preoccupied with our bundle of love.
On top of Thanksgiving, this is going to be a crazy week for us because my brother is getting married on Saturday (so excited!) in Rapid City, SD. This means we are traveling with a 3 week old and a 2 year old. Pray for us.
But back to Thanksgiving! If you’re doing a low-key or smaller Thanksgiving this year, can I recommend making a turkey breast instead of an entire turkey? For one, it’s WAY easier, takes less time, and takes less room in your oven. Win, win, and win.
While I totally get the desire to make a super impressive whole turkey (I have a recipe for that coming later this week!), if you don’t NEED an entire turkey, why not just make a turkey breast?
I developed this recipe for Jennie-O, using their Oven Ready Turkey Breast. And when they say it’s “oven ready” they really do mean it. I didn’t HAVE to do anything to the turkey breast except take it out of the package and bake it according to the instructions. You don’t even have to thaw the turkey!
Of course, I wanted to jazz it up a little bit. I couldn’t help myself. So I made a super simple herb butter and slathered it all over the turkey. Not only did it add some additional flavors but it also created a super pretty crust of herbs.
