Today is the Day!

Today is officially my due date, so either I'm in labor, or sitting around twiddling my thumbs, and waiting for this baby boy to arrive!  Since I'm writing this ahead of time, I also could've already had him. But I'm not getting my hopes up for an early delivery.

If you remember from last time, I started labor on Lars' due date, which was a Saturday, but didn't end up delivering him until Monday, after a very drawn out and intense labor.  I've been mentally preparing myself for a similar experience this time. But really, I'd love it to be a little easier this time around!

Regardless of when this baby comes, I'm going to be busy the first few weeks of November, which is prime-time for holiday recipes! While I didn't get as much cooking/recipe development done ahead of time as I had hoped, I did have time for a few recipes that are ready to be shared with you!  It's not too early for that is it?  Wait, don't answer that 😉

Crunchy Honey Butternut Squash Casserole

I made this Crunchy Honey Butternut Squash Casserole for a "Thanksgiving trial run" dinner I did.  I had to develop a turkey recipe for a client so I figured, why not make an entire Thanksgiving dinner?

The tough thing about creating new Thanksgiving recipes is that so many people have their tried and true recipes that they use every year. I don't like anything too crazy on Thanksgiving, and I think the majority of people are the same.  This is why I think this butternut squash casserole is PERFECT for someone who wants something a little different, but still pretty classic.

While this Crunchy Honey Butternut Squash Casserole is perfect as a Thanksgiving side. It would also be delicious with any fall dinner.  In addition to being absolutely delicious, it is also insanely easy.  The ingredients are SO simple: butternut squash, butter, honey, breadcrumbs, and Parmesan cheese.  That's it!

You simply slice the butternut squash into half circles. Next, line them up in a casserole dish and bathe them in a honey butter mixture.  Then you top with breadcrumbs and Parmesan, and let it bake!

Crunchy Honey Butternut Squash Casserole

Ingredients

  • 1 large butternut squash preferably one with a longer "neck"
  • 5 tablespoons unsalted butter
  • cup honey
  • ½ teaspoon salt
  • ½ cup breadcrumbs
  • cup Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  • Preheat oven to 375 degrees F.
  • Peel your butternut squash.
  • Cut the long "neck" part down the long way, and then slice into thin semi-circles.
  • Scoop out the seeds from the fatter part and cut into semi-circles.
  • Arrange in 9x13" baking dish.
  • In a small pan, melt butter and honey.
  • Season with salt.
  • Add 3 tablespoons of the mixture to breadcrumbs and Parmesan cheese, mixing well to combine.
  • Pour remaining mixture over the squash.
  • Top with breadcrumb/Parmesan mixture.
  • Bake in preheated oven for 25 minutes covered with foil, then remove foil and bake another 20-25 minutes, until golden brown and squash is tender.
  • Serve with chopped parsley.
  • Enjoy!
