Peach and Kale Salad with Yogurt Honey Mustard Dressing

This Peach and Kale Salad with Yogurt Honey Mustard Dressing is a light and summery salad with chopped kale, coleslaw mix, pecans, feta cheese, and sweet peaches all tossed together with a yogurt honey mustard dressing!  
Peach and Kale Salad with Honey Mustard Dressing Happy Monday!  I'm writing this on Saturday night because on Sunday night (so....last night to you) we went camping!  Which means we have been up since the crack of dawn with Lars, I'm sure.  Lars is naturally an early riser, so unless we have the strongest of blackout shades, he's up with the sun.  p.s. blackout shades are a LIFESAVER.  Seriously.

If you follow me on Instagram, specifically Instagram stories, you probably know that Lars and I were in Iowa last week.  And the week before that we were at the cabin.  Which puts me at exactly 3 nights in my own bed this month, so far.  This will also put me at 25 weeks pregnant and sleeping on a sleeping pad.  I'm not sure how I feel about either of these things but I'm pretty sure both of them are worth the payout.

As in, the nights spent away from my bed were worth it to be at the cabin and in Iowa for a week, and the probably extra-achy pregnancy sleep will be worth the experience of camping with my boys.

Anyways, enough about me not sleeping in my own bed - let's talk about this Peach and Kale Salad with Yogurt Honey Mustard Dressing!  I love so man things about this salad.  For one, it's EASY!  I strongly recommend buying pre-chopped kale (anyone else get that gigantic bag of kale for juicing at Target?  I put that stuff in everything!) and coleslaw mix to make this even easier than it is.  Aside from mixing together the dressing ingredients, the only other real prep is to slice the peaches and toss it all together.

I also love how the kale and coleslaw mix hold up to the dressing.  unlike spinach or romaine, they don't get soggy with the dressing.  This means it's an awesome potluck or BBQ side dish, and is also fair game for lunch leftovers the next day.  
Peach and Kale Salad with Honey Mustard DressingAnd let's talk about the dressing.  It's basically a poppy seed dressing, minus the poppy seeds, and with a little dijon mustard to kick it up a bit.  I had intended it to be a poppy seed dressing but then I realized I was out of poppy seeds and I wondered to myself, what's the purpose of the poppy seeds anyways?  I had a feeling that you would appreciate not having to buy them so I left them out and guess what?  I didn't even notice.

I brought this salad to a BBQ with some old coworkers, and we all loved it.  I think everyone appreciates a healthier option at a potluck and especially one that is also tasty!  I hope you love it as much as we did!

Peach and Kale Salad with Honey Mustard Dressing

Ingredients

  • 6-8 cups chopped kale
  • 2 cups coleslaw mix or 2 cups shredded cabbage and carrots
  • 2 peaches seed removed and sliced
  • ½ cup feta cheese
  • ½ cup pecans

For the dressing:

  • ¾ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoon olive oil

Instructions

  • Combine kale and coleslaw mix in a large bowl.
  • In a small bowl, combine dressing ingredients and whisk until combined.
  • Add ~½ of the dressing to the kale and coleslaw mixture and stir until evenly distributed.
  • Top salad with peaches, feta cheese, and pecans, and drizzle with as much of the remaining dressing as you want.
  • Serve and enjoy!
