Homemade Berry Coconut Bomb Pops

These Homemade Berry Coconut Bomb Pops are refined sugar free and a yummy summer treat for toddlers, kids, and adults!

One of my favorite childhood memories is running to catch the ice cream truck that would jingle through our streets daily.

My all-time favorite ice cream treats to buy were the chocolate crunch bars, the screwball ice cream cups (with the gum ball at the bottom!), any of ice cream character bars on a stick (likely with gum ball eyes), or BOMB POPS!

I feel like Bomb Pops are one of those things like XXX that are just a symbol of a 90's childhood.  Or maybe even a childhood these days, idk.

Some day Lars will get to experience all the joys of the artificial Bomb Pops, but today is not that day.  Today Lars gets something even better: homemade (refined sugar free) Bomb Pops!  For all he knows, these are the original Bomb Pops.

Lars absolutely loves these popsicles.  He actually loved them so much that I had to hide them in the basement freezer because any opening of the freezer led to a meltdown if he couldn't have a popsicle.

The thing is, these are actually healthy enough that he *could* have them any time of the day, not just for dessert.  The ingredients are simply strawberries, coconut milk, blueberries, honey, and lime.  That's it!  But as anyone who knows anything about toddlerhood, popsicles are not the cleanliest of treats.  And when we're talking about strawberry and blueberry juice, these berry coconut bomb pops are basically a naked-except-for-a-diaper outdoor treat.  I learned that after taking these photos.

In my mind, the mess is totally worth it to see him love a fun and healthy summer treat.  And I'll keep making them until the fateful day when he discovers the ice cream truck 😉

Homemade Berry Coconut Bomb Pops

Servings: 6 -8 popsicles, depending on size of your popsicle molds

Ingredients

  • Strawberry Layer:
  • 2 cups strawberries stems removed (fresh or frozen work)
  • 2 tablespoons honey
  • juice from ½ lime
  • Coconut Layer:
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey
  • juice from ½ lime
  • Blueberry Layer:
  • 2 cups blueberries fresh or frozen
  • 2 tablespoons honey
  • juice from ½ lime

Instructions

Before you start:

  • Place can of coconut milk in refrigerator for a couple of hours. You will use the solid part of the coconut milk that separates to the top in this recipe and refrigeration helps the separation.

To make the strawberry layer:

  • Place strawberries, honey, and lime in a food processor or blender and blend until pureed.
  • Divide evenly among popsicle molds, filling each one approximately ⅓ of the way. You might have leftover of each layer, depending on how many popsicles you are making and how large your molds are. I put the extra in ice cube trays to add to smoothies.
  • Place in freezer for 45 minutes.

To make the coconut layer:

  • Measure approximately 1 cup of the solid coconut milk from the refrigerated can. If you don't get quite 1 cup you can add a little of the liquid part too.
  • Add coconut milk, honey, and lime juice to food processor or blender (that has been cleaned out from strawberry layer) and blend until pureed.
  • Divide evenly among popsicle molds on top of strawberry layer.
  • Freeze another 45 minutes.

To make the blueberry layer:

  • Place blueberries, honey, and lime juice in a food processor or blender and blend until pureed.
  • Divide evenly among popsicle molds, on top of coconut layer.
  • Top with popsicle sticks (however your mold works...some have lids, some have a slot for sticks), and freeze at least 4 hours, optimally overnight.
  • Keep frozen until ready to enjoy!
