I have a confession. For years my breakfast game has consistently been strong. I typically cycle between hot oatmeal, overnight oats, oatmeal bakes, or egg bakes depending on my mood and the weather. But one thing has stayed same throughout my adult life: I always, always, always have a good breakfast.
Lately, however, my breakfasts have been lame. LAME. My appetite has been weird the past few months and I haven’t always felt hungry in the morning (nope, don’t even go there) so my motivation to eat breakfast has been lacking. My lack of appetite has affected my desire to actually cook breakfast so (and here comes the confession) I’ve mostly just been eating Lars’ leftover eggs and English muffin for breakfast. So bad!
But today, I’m here to take back the breakfast! It’s time to get back on the breakfast train and what better way than a new overnight oat recipe?!
I am a huge fan of overnight oats because there’s practically no work to do in the morning. I usually do the combination of oats, chia, flax, honey, cinnamon, and almond milk the night before and then the morning of I top it with some peanut butter and sliced bananas. Simple and perfect.
Sometimes, though, ya just need to mix things up. And what better way than with strawberries around Valentine’s Day?! The fact that these oats are pink makes me think these would be a delicious way to start V Day dontcha think?
The oats are pink from two things. First, I mashed up fresh strawberries. Frozen would work too you would just need to thaw them out. I mashed them to get the juices out so the flavor would really soak into the oats. Second, I used strawberry yogurt. We don’t typically buy flavored yogurt but Marc went to the grocery store and picked up some Greek Gods strawberry yogurt and holy wow is that stuff delicious. It’s SO rich and decadent.
You can definitely use plain or vanilla yogurt and it will still be great. With the fresh strawberries there is still a ton of strawberry flavor and if you want it sweeter just add a little more honey.
After making a few mason jars of this Strawberry Overnight Oatmeal, I definitely feel like I have my breakfast mojo back!
