Freezer Friendly Southwestern Breakfast Burritos are filled with turkey sausage, bell peppers, onions, and cheese, and are great for freezing and having on hand for busy weekday mornings!
Some days, getting a hearty breakfast in just isn't going to happen. That its, unless you plan ahead and make these Freezer Friendly Southwestern Breakfast Burritos! On the days that I have to be out the door by 6:30 a.m. I just grab a banana and English muffin with peanut butter or a granola bar, but that definitely doesn’t keep me satisfied very long.
I’ve found one of the only breakfasts that really keeps me full and happy until lunch is one with eggs. This is why on the days I don’t work, I’m all about the avocado toast topped with two fried eggs. But who has time to make that before 6:30 a.m.? Not me.
This is when I turn to my trusty freezer breakfast burritos. I’ve shared my recipe for Chorizo Breakfast Burritos in the past and now I have another favorite: Freezer Friendly Southwestern Breakfast Burritos.
These breakfast burritos are great for freezing and having on hand to nuke in the microwave on those busy weekday mornings. They’re also perfect to make on the weekend when you’re lounging in your PJ’s until 10. Or 11...12..? and want to make a tasty brunch.
I used Jennie-O turkey sausage which is a great healthy alternative to pork sausage, and also bumps up the protein in these breakfast burritos. Along with the sausage these burritos have green and red bell peppers, onions, corn, black beans, some spices, scrambled eggs and of course, cheese! We topped ours with some plain Greek Yogurt and green onions, but salsa and cilantro would be another tasty option, too.
With a freezer full of these breakfast burritos, I don’t have to worry about what’s for breakfast, or that 9:00 snack monster coming out!

What a great idea! I actually had no idea that Jenni-O made turkey sausage like that. I think these would definietly hold me over. I agree with you, a banana and a granola bar [or bagel] just doesnt cut it with my tummy beast! Not that I dont already eat every 2 hours anyway... 😉
