Happy Friday! We had a great week, celebrating our anniversary by going out to dinner on Monday night and on Tuesday we took a trip down to Northfield, MN where Marc went to college and did a little meandering around the college town and campus, and took a trip to an apple orchard.
I made a batch of my slow cooker apple butter (except I subbed 1/2 cup of honey for the granulated sugar) and you better believe I have more apple recipes coming at ya in the next few weeks! Last night we enjoyed a couple of drinks on our patio with that apple butter, Havarti cheese, and a loaf of french bread. Holy man was it good.
Here are my faves from the week!
Favorite I Gotta Make That: Skillet Honey Cornbread with Honey Butter. Marc and I went to one of our favorite Minneapolis restaurants for our anniversary on Monday and they have the. best. cornbread. ever. with honey butter. I gotta make this from Kailey’s Kitchen ASAP!
Favorite Healthified Football Eat: Spinach and Kale Artichoke Dip from Joyful Healthy Eats. Dips are my definition of football food and since it has kale it’s healthy, yes?
Favorite Nostalgic Dinner: Homemade Cheesy Beef-a-Roni from Homemade Mom. I grew up on Hamburger Helper (from the box!) but now that I’m a little more culinarily refined (ha!) I think I’ll opt to make it from scratch. Plus – that CHEEEEEESE!
Favorite Lazy Morning But I Need Food NOW Breakfast: Quick Cinnamon Rolls for Two from Dessert For Two. I can’t even count the number of times I’ve seriously craved a fresh homemade cinnamon roll but didn’t make them because 1) I didn’t want to wait for the dough to rise a billion times and 2) I didn’t want an entire batch for just Marc and I. These solve all of my problems!
Favorite Pumpkin Dessert (because there will be a favorite pumpkin dessert every week from now until Thanksgiving): Salted Caramel Pumpkin Cake from A Kitchen Addiction. Not only does this have salted caramel in the cake but there’s salted caramel frosting!! These are the things my dreams are made of.
Favorite Classic: Oatmeal Chocolate Chip Cookies from Bakes in Slippers. ‘Cause sometimes, ya just gotta go back to the good ‘ol oatmeal cookies. Don’t these look just perfect?!
Favorite Fall Breakfast: Apple and Maple Butter Pop Tarts from The First Year. One of my favorite breakfasts (if you can call it that) growing up was Pop Tarts. Specifically, the Cinnamon Sugar Pop Tarts. These look similar BUT so much better! I mean – maple butter?! Yes and yes.
Favorite Thought: Make your weekend an adventure 🙂
