For the past three years that Marc and I have lived together, we’ve been in somewhat of a coffee maker war. It started when I received a coffee maker for Christmas and wanted to replace Marc’s older (ahem, ancient) coffee maker with my bright and stainless-steel-shiny new coffee maker. Essentially what went down is that neither of us were going to use the other person’s coffee maker, and in the end we kept both of them. As in, we had two coffee maker on our counter. In our apartment kitchen with very limited counter space. It turns out we can both be very stubborn about things we are passionate about (i.e. coffee).
When we moved into our new house, however, I knew this coffee war just could not go on. We couldn’t have two coffee makers on the counter in our very own house! In our apartment, okay fine. But our house? No! I think the coffee Gods were watching over us (and our marriage) because just as we were making our move, Cuisinart sent me their new 12-cup Coffee Plus Coffee Maker and Hot Water System to try. Somehow we both let our guards down, let go of our personal coffee makers, and came together to use this one (and amazing) coffee maker. And now, everything is right in the world.
We’ve been using this coffee maker for over a month now, and Marc and I both love it. I love that it’s programmable, so I can wake up in the morning to my coffee already brewed and ready to be poured, and Marc loves that there’s no built-in coffee grinder, so he can use his own beloved grinder. I also really like having the hot water system for my night time tea.
To celebrate our new coffee maker and the beginning of peaceful coffee making, I decided to make a special coffee treat. Oh and also because we accidentally bought decaf coffee which we will never ever drink on purpose and I wanted to use it up so we don’t drink it on accident. It’s not pretty when we don’t get our caffeine. PLUS I just love mocha flavored desserts.
Since it’s quickly approaching official ice cream season, I figured a new ice cream flavor was in order. That’s where this Coconut, Coffee, and Chocolate Chunk Ice Cream comes in. I know the combo of coffee and coconut might seem a little strange but seriously – TRUST ME on this one. It’s delicious! The ice cream itself has both strong coffee and coconut extract along with shredded coconut to amp up the coconut flavor. Then I threw in some chopped up chocolate because you can never go wrong with chocolate, am I right? Side note: I prefer chopping chocolate so it is more flaked rather than adding chocolate chips to chocolate because I can’t stand biting into cold chocolate. But that’s just me so you can add chocolate chips or chunks – whatever you prefer!
