You guys, I am a convert.  I am no longer a person who doesn’t understand how people can eat plain yogurt because ewww it tastes like sour cream!  How did such a huge life transformation come about, you’re asking?!  Simple: I made my own yogurt!  While I thought it was going to be a complicated and daunting task, it actually ended up being easy-peasy and just a bit time consuming.  But the results were oh-so worth the time it took.  I’m pretty sure I’ll never be able to go back to sweetened yogurt ever again.

I never would have considered making my own yogurt until I received the lovely Julia’s (who, p.s. is awwwesome) new cookbook Delicious Probiotic Drinks.  While flipping through it for the first time, I was in awe of all of the beautiful pictures (who knew ginger beer and kombucha could look so pretty?!) and down right inspired.  Julia does such a wonderful job at taking the reader through the processes of making time-intensive and multiple-step recipes for fermented drinks and made me feel like I could actually make them.

Since I’m an avid yogurt eater, I decided to make yogurt first.  I was also planning to make one of the variations that Julia has in her book (banana cream pie yogurt!  mojito yogurt!) but truthfully, after one bite of the homemade plain yogurt, I was too enamored.  Seriously, so delicious.

To go with my plain yogurt, I whipped up a big batch of this quinoa granola.  I’ve been wanting to make granola with quinoa and I’m so glad I finally did.  The quinoa goes in uncooked and as it bakes it just intensifies the distinct nutty flavor of quinoa and is also a bit crunchy, too.  I added sliced almonds, flax, and coconut, but you could substitute your favorite add-ins.  I also used coconut oil instead of vegetable oil and really loved the extra coconut flavor.  This is definitely my new favorite granola!

Ingredients

  • 1 cup uncooked quinoa
  • 1 1/2 cup old fashioned-oats
  • 1 cup sliced almonds
  • 3/4 cup shredded coconut (I used sweetened)
  • 2 tbsp whole flaxseed
  • 1/2 tsp salt
  • 1/4 cup melted coconut oil
  • 2-3 tbsp maple syrup or honey (depending on how sweet you want it)
  • 1 tsp pure vanilla extract

Directions

  1. Preheat oven to 325 degrees F.
  2. In large bowl combine quinoa, oats, almonds, coconut, flaxseed, and salt.
  3. Stir to combine.
  4. In small bowl, whisk together melted coconut oil with maple syrup and vanilla extract.
  5. Pour over dry ingredients and stir well, mixing to combine.
  6. Pour onto baking sheet lined with parchment paper and spread out evenly.
  7. Bake in preheated oven for 20 minutes, stirring after 10 minutes and watching carefully during the last 5 minutes to make sure it doesn't get too brown.
  8. Let cool completely.
  9. Enjoy over yogurt, milk, or by itself!

    Wow, I dunno! I do love ginger beer, but never even considered I could make it at home. And I’ve been wanting to make my own yogurt for a while, but I just keep getting distracted with other projects. It would be hard to pick just one!

    I love that you can make the yogurt to your own sweetness. I would make that first Living with a diabetic husband that is so appealing. Also adding quinoa to granola is a great way to add protein. How can you go wrong with delicious homemade yogurt and granola? Thanks for the recipe.

    So funny you should post this today….the hubby was just giving me HARD time this morning that I’m letting the kids eat all the Greek yogurt (I buy it by the quart) and I’m not rationing it…..men. I would love to try my own!

      Oh my gosh Ally – my husband gives me such a hard time about my “$100 Greek yogurt” too! Which, by the way, is totally inaccurate, but yes it really can get expensive. I’m loving that I can make my own now!

    I have heard about Julia’s book and would love to win it! I recently started brewing my own kombucha so would like to make a few of her flavored versions. I’m also curious about kefir.

    i printed out your granola recipe. My adult son loves granola (and so do I). I think I would like to make yogurt from the book. I’ve never made it before!

    I can remember my mom making her own yogurt in the 70′s! I seem to recall it was delicious, but that it took up a bit of real estate in the fridge. But, making my own yogurt might be fun, or my doctor suggested that kefir is even better for you than yogurt….so it’s a toss up! (I don’t know what kombucha is. Maybe I should try some?)

    I would go for the ginger beer! It is expensive to buy and a wonderful treat! I am already a regular yogurt and kombucha maker and have dabbled in kefir, so I would be interested to see if there are any more tips and tricks to pick up in this book. Thanks for hosting a giveaway!

    I received a batch of your quinoa granola as a gift, hence how I learned about your great website! I can’t wait to try my hand at making the granola and the peanut butter lara bars this weekend. I would have to try the ginger beer first – if it’s gluten free, as I love Joia’s ginger, apricot, & allspice soda.
