Cranberry Eggnog Biscotti

Can someone remind me to never, ever, ever, again go to the mall on a weekend in December? Seriously, what. a. nightmare. Why would anyone put themselves through it? But so many people do, and as a result there are people rushing everywhere (everwhere!), not a single parking spot, and lines.
Ohhh the lines. Yet, there I was on Saturday afternoon, at the mall. I tried my hardest to make the best of it and when someone was in my way, rudely cut me off, or took my parking spot (it happened.) I just smiled and wished them a 'Merry Christmas', in my head. Although I may or may not have added a bad name to the end of it. Bright side: I finished my Christmas shopping.
So after a busy day of shopping and fun Christmas party that night, I woke up on Sunday needing to unwind. Naturally, I headed into the kitchen to bake a treat for breakfast. I wasn't sure what I wanted to make but when I eyed the carton of eggnog that I've been chugging the past few days, I had the idea for an eggnog baked good. Since I made eggnog muffins last year, I went with biscotti.
Cranberry Eggnog Biscotti
When you think of it, biscotti is really just a cookie that is acceptable to eat for breakfast. Which I am totally okay with. This biscotti is a fun and festive breakfast treat, spiced with eggnog and nutmeg, filled with dried cranberries, and drizzled with an eggnog glaze.
They were super tasty dipped in our piping hot coffee, but I'm thinking they would also go well with some hot chocolate or a latte. After a few of these, I forgot all about the shopping horror from the day before. Mission, accomplished.
Ingredients
for the biscotti:
- ½ cup 1 stick unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- ½ cup eggnog
- 1 teaspoon rum extract or vanilla extract
- 3 ¼ cups all-purpose flour
- 2 teaspoon baking powder
- 2 teaspoon ground nutmeg
- ½ teaspoon salt
- ½ cup dried cranberries
for the glaze:
- 1 cup powdered sugar
- 1 teaspoon rum extract or vanilla extract
- 2-3 tablespoon eggnog
Instructions
- Preheat oven to 350 degrees F.
- Line baking sheet with parchment paper and set aside.
- In large bowl, beat together butter and sugar until well combined, about 2 minutes.
- Add eggs, one at a time, mixing until combined.
- Add eggnog and extract, until combined.
- In separate bowl, whisk together flour, baking powder, nutmeg, and salt.
- Gradually add flour mixture to wet mixture.
- Fold in cranberries.
- Refrigerate for 30 minutes.
- Separate dough in half, and form into two 1" high logs on a well floured surface. They should be oblong shaped.
- Place them onto prepared baking sheet.
- Bake in preheated oven for 25 minutes, until golden brown.
- Remove from oven and let cool until warm enough to handle, but still warm.
- Cut crosswise into ~½" slices.
- Place them onto baking sheet (same one you used before) cut side down.
- Bake 10 minutes, then flip to other side and bake another 8-10 minutes.
- Let cool completely before glazing.
to make the glaze:
- Combine powdered sugar, extract, and eggnog.
- Drizzle over cooled biscotti.
- Enjoy with cup of coffee or hot cocoa!

I *hate* going to the mall during Christmas time. I refuse! This year I did all of my Christmas shopping online and it has been amazing! No stress, and I did it all in my PJ's watching Christmas movies. These eggnog biscotti's look delicious. Can't wait to make them and dunk them in my morning coffee. Yum!
