I know, I know, it’s Friday. Which usually means its time for Friday Faves in my little corner of the interwebs. But I just couldn’t wait to post this salad. I made it last night and after my first bite I knew it had to be shared immediately. That, and I also have been bad at my blog viewing and Pinterest surfing this week and didn’t have enough ‘favorites’ to share. But mostly because this salad is so. stinking. good.
Ever since posting this Strawberry and Kale Salad on Friday Fave’s last week, I’ve been craving a salad with fruit in it. I wanted a bit more than just strawberries so I added raspberries and blueberries too. I also saw the idea of adding quinoa to a green salad from Confections of a Foodie Bride, so I added quinoa for extra protein. Then I added goat cheese. Don’t skip the goat cheese. It’s essential.
All of these things work together to make one amazing salad. The quinoa adds a nice chew to the salad, which might sound strange and not make sense but once you try it, you’ll understand. I loved the variety from the three fruits, especially compared with the creamy, tangy goat cheese. Side note, why have I neglected goat cheese for the past year?! This is not a cheese to be neglected. Seriously I’m so happy it’s back in my life.
I added grilled chicken on the top of mine for dinner, but the salad didn’t need it. It was almost like protein overload, and with the quinoa, cheese, and fruit it was plenty filling and satisfying. It would be a great side salad, but also perfect for a light summer dinner.
