Nothing beats fresh muffins on a snow day, eaten while still in your pajamas. Oh man, just envisioning the coziness of it all gets me excited for our first snowfall! I haven't always been a fan of winter but Marc has taught me to embrace the cold and snow and make the most of it! Oh, and kids who love to be outside help, too. I've been making these Eggnog Muffins with Streusel Topping for almost 10 years now and can't wait for the first snowfall to make them again this year!

Eggnog is one of my favorite holiday treats and while I could throw back an entire carton by myself, I like to bake with it too. I've used it to make scones, biscotti, cheesecake, cookies, and these eggnog muffins. I also love using eggnog in cocktails, like my Baileys Eggnog!

These muffins are super easy to whip up, and the extra step of making the streusel is so worth it.  If you are an eggnog fan like me, these are a must-make for your next snow day breakfast.

  • Butter
  • Sugar
  • Eggs
  • Vanilla Extract
  • Flour
  • Baking Powder
  • Salt
  • Cinnamon
  • Nutmeg

How to Make Eggnog Muffins

Eggnog Muffins are really easy to make, with pantry staples! First, start by beating together room temperature butter and sugar until they are combined. Next, add the eggs and vanilla, beating until combined.

Next, add the baking powder, cinnamon, nutmeg, and salt and mix until combined. Now add half of the flour, and mix until combined, followed by half of the eggnog, mixing until just combined. Repeat with the remaining flour and eggnog, mixing until just combined.

Pour into a greased muffin pan, and then make the streusel! For the streusel, combine melted butter, sugar, flour, and nutmeg and mix to combine. Sprinkle on top of the muffins and then bake for 16-20 minutes, until the tops are golden and baked through.

Ingredients

Muffins

  • 4 tablespoon butter at room temperature
  • ¾ cups sugar
  • 2 large eggs
  • 2 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 ¼ cups eggnog

Streusel

  • ½ cup sugar
  • ½ cup flour
  • 3 tablespoon melted unsalted butter
  • ½ teaspoon ground nutmeg

Instructions

  • Preheat the oven to 425 degrees. Line a muffin pan with liners and spray lightly with nonstick cooking spray.
  • To make the muffins:
  • In the bowl of a stand mixer, cream the butter and sugar at medium speed until light and fluffy.
  • Add the eggs, one at a time, scraping down the bowl after each addition.
  • Add the baking powder, nutmeg, salt, and vanilla extract to the bowl and mix until just combined.
  • Beginning and ending with the flour, alternate adding the flour and eggnog to the bowl, mixing at low speed, just until each ingredient is incorporated.
  • Scoop the batter evenly into the prepared muffin cups.
  • To make the topping:
  • Use a fork to combine all of the ingredients just until the mixture is crumbly.
  • If you mix too much, it will form into a cohesive ball, not a crumbly topping.
  • Sprinkle the topping evenly over the batter.
  • Bake 16-20 minutes, or until the topping is turning golden-brown and the muffins are cooked through.
  • Allow to cool for a few minutes in the pan, then transfer the muffins to a wire rack to cool before serving.
