crock pot french onion pork tenderloin

I finally, FINALLY had a weekend at home, with nothing to do but check things off my wedding to-do list.  Which actually meant I had a TON to do.  Fortunately we were able to pick ceremony music, choose ceremony readings, buy these, pick out Marc’s ring, make progress on the seating chart, and I found my rehearsal dinner dress.  All that, and I was finally able to cook and bake as much as I wanted!  
 
This recipe isn’t from this weekend, though.  I’m still working on getting the pictures from the camera to the computer…I have a limit on weekend productivity and I’ve maxed out.  I made this pork tenderloin last week when I knew between working out and errands I had to run after work,  I would be starving the second I walked in the door.  You have no idea how happy I was that I planned ahead when I got home that night.  All I had to do was pop some bread and veggies in the oven, and before I knew it dinner was ready.  
 
I’ve had very little experience cooking (okay, none) pork tenderloin.  From past experience eating pork tenderloin, I was expecting this pork to be sliceable.  As in, I would take the entire tenderloin out of the crock pot and then slice it cross wise.  This was not the case.  Instead, the pork was fork tender and was melt-in-your-mouth good.  The pork soaks up all of the flavor from the french onion soup mix, and in Marc’s words it was “phenomenal.”  Definitely a crock pot winner.

Ingredients

  • 1 (2 lb) pork tenderloin
  • 1 (1 oz) packet French Onion soup mix
  • 1 cup chicken broth
  • 1/3 cup sherry cooking wine (or red wine if you have a bottle open)
  • 3 tbsp soy sauce
  • 5 cloves garlic, minced

Directions

  1. Place pork in crock pot.
  2. Mix together soup mix, chicken broth, wine, soy sauce, and garlic.
  3. Pour over pork.
  4. Cook on low for 8 hours.
  5. Cut or shred tenderloin and pour remaining juice over pork. Enjoy!
