When I go out to eat, there’s a pretty good chance that I’ll order fish, and most likely it will be salmon. Marc teases me about it and claims he can always pick out what I’m going to order. It’s true, I’m pretty predictable when it comes to my menu ordering (unless another dish involves truffle oil, goat cheese, or lots of mushrooms!) and when we grill out (unless I’m really craving a burger). Chances are, I’ll have the salmon.
So last weekend when my dad asked what I wanted to grill, I decided to switch things up a bit. I told him I wanted to do some sort of white fish and he came home with a huge chunk of halibut. We decided to do a nut-crust and ended up picking almonds. While we referenced a couple of recipes, we pretty much just made it up on our own and it ended up turning out delicious!
The almond crust was thick and added great flavor, while the white fish on the inside (though we may have cooked it a bit long) was nice and flaky. You can make it on the grill like we did or you could also bake it in the oven, and I’ve included instructions for both ways. Served up with some fresh green beans and potatoes on the grill and you’ve got yourself a tasty and healthy dinner!
Almond Crusted Halibut
1 1-1.5 lb halibut filet, about 1 inch thick
1/2 cup all-purpose flour, salted
1 egg, lightly beaten
1 tsp dijon mustard
2/3 cup slivered almonds, toasted and roughly chopped
2 tbsp butter
If baking, preheat oven to 400 degrees F. Grease baking dish with cooking spray and set aside. If grilling, turn on grill.
Place flour in a shallow bowl. Mix egg with dijon mustard in another shallow bowl. Place almonds in separate bowl.
Pat fish filet dry with paper towel. Lightly season with salt and pepper, then dredge first in flour mixture, then in egg mixture. Lastly, coat with almond mixture, lightly pressing the fish so the almonds stick to it.
If baking, place in baking dish and top with butter. Bake 15-20 minutes, or until the fish can be flaked.
If grilling, put fish on a greased piece of aluminum foil, then place on grill. Cook on grill for 15-20 minutes, or until the fish can be flaked. Enjoy!
