Slow Cooker Honey Lime Chicken with New Potatoes

makes 4 servings
2 tbsp olive oil
8 bone-in, skin-on chicken thighs
salt and pepper
1 1/2 lb new potatoes, washed and quartered
1 small onion, sliced
3 cloves garlic, minced
1 tsp dried thyme, or 5 sprigs fresh thyme, leaves picked and chopped
2 lemons, thinly sliced
1/4 cup honey
1/4 cup water
In a large skillet, heat oil over medium-high heat. Season chicken with salt and pepper, then brown both sides, about 2 minutes each side.
In slow cooker, add potatoes, onion, garlic, thyme, and lemon slices. Season with salt and pepper, then lay the browned chicken on top. Drizzle with honey. Add water, cover, and cook on high for 4 hours or low for 6-8 hours. Enjoy!
