Merry Monday everyone! This week’s theme is Christmas cookies – who doesn’t love cookies?! My cookie recipe for this week is for Potato Chip and Toffee cookies and while it might sound a little odd considering you don’t typically find chips in cookies, but I’m tellin’ ya they are tasty! The chips and toffee give the cookie that sweet and salty combo that I just love, and the ground pecans give the cookie an underlying nutty taste. They are bound to intrigue and please your friends and family this Christmas season.

Potato Chip and Toffee Cookies
adapted from My Baking Addiction
1 cup (2 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
3/4 cup crushed potato chips
1/2 cup ground pecans
1 tsp pure vanilla extract
2 cups all-purpose flour
3/4 cup toffee bits
1/2 cup sugar, for rolling the cookies in
Preheat oven to 350 degrees F. Line cookie sheet with parchment paper and set aside.
Cream butter and sugar until light and fluffy, about 3 minutes. With mixer on low, add in potato chips, pecans, and vanilla. Stir in flour and mix until just combined. Finally, stir in toffee bits.
Place remaining sugar in small bowl. Make 1 1/2 tbsp dough balls, roll in sugar, then place on prepared baking sheet. Lightly flatten with the bottom of a glass. Bake in preheated oven for 12-15 minutes, or until edges are slightly golden brown. Cookies will firm up while cooling. Let cool on baking sheet for 5 minutes, then transfer to cooling rack to completely cool.
