Merry Monday! Can you believe it’s already the middle of December and less than a week until Christmas? It’s crazy, I tell ya! This week’s Merry Monday theme is candy and though I was all stoked to make some peanut brittle, my dreams faded when I couldn’t find my candy thermometer.
After my step-sister suggested making cake balls, I thought of the truffles I had seen made with Oreos. These truffles are the type of treat you can fall back on when you need something quick, easy, and extremely tasty to whip up this holiday season. I’ve seen them made with regular Oreos which I’m sure are delicious, but I really loved the mint version. Especially topped with the crushed candy canes, which added a little crunch and extra peppermint flavor. Definitely a hit!

Mint Oreo Truffles
1 package of Mint Oreos
1 (8 oz) package of cream cheese, at room temperature
1 package of white almond bark
1/2 cup crushed candy canes
Place Oreos in a large food processor and pulse until fine crumbs. If you don’t have a food processor, you can put them in a large freezer baggie and crush them finely with a rolling pin.
Place Oreo crumbs in large bowl and add cream cheese. Mix until well combined. Roll into tablespoon balls and place on a parchment or wax paper lined baking sheet. Refrigerate for 30 minutes to an hour.
Melt almond bark according to directions. Dip chilled balls into melted bark and place back on baking sheet with lining. Sprinkle with crushed candy canes immediately. Repeat with remaining truffles. Refrigerate another 15-30 minutes, to let almond bark set up. Keep refrigerated until serving. Enjoy!
