Finding out each month’s assignment for Secret Recipe Club is like Christmas morning once a month. There’s the anticipation and the excitement of the unknown, and then the “recipe browsing” after the announcement that (at least for me) can last days. It’s the best! Some months it has been a challenge to narrow it down to one recipe, as there are so many recipes I want to make. Other months, it is fun challenge as I’ve been assigned to blogs that have much different cooking styles than I do. This month happens to be the latter. I was assigned to For the Health of It, written by Heather who is a vegetarian (who “dabbles” in veganism) that writes a healthy living blog.
Looking through Heather’s recipes, I was intrigued by so many of her recipes like Life-Changing Vegan Cheese Sauce, Peach and Chia Jam, and Vegan Orange Walnut Cake. Ultimately, I chickened out and made something a little less adventurous, but just as fun! I mean, I’ve never even heard of fruit salsa and I’m all about any sort of sweet snack. Especially one I don’t feel guilty about eating.
I adapted Heather’s recipe according to what I could find at the store. I only found one mango that was ready to be used (the rest were rock hard), I couldn’t find red plums so I used a pear instead, and I added strawberries for some added color. You could also play around with the different fruits like oranges, blueberries, whatever you want or whatever’s in season. I loved that this was incredibly simple to make, with just a little bit of therapeutic chopping and mixing, and it was done! The honey and cinnamon were the perfect flavors to bring all of the fruits together. Heather says this makes enough for a whole office to eat, so now you know what to bring for your next potluck!
Fruit Salsa with Cinnamon Chips
adapted from For the Health of It
for the fruit salsa:
1 mango, peeled and diced
2 kiwis, peeled and diced
1 cup chopped pineapple
1 pear, diced
1 cup chopped strawberries
2 tbsp honey
1/2 tsp vanilla extract
cinnamon, to taste
for the cinnamon chips:
10 wheat tortillas
cooking spray
cinnamon sugar
Directions:
To make the salsa: combine all salsa ingredients and mix well to combine. Store in air-tight container in the refrigerator.
To make the chips: preheat oven to 350 degrees. Slice tortillas into wedges, toss with olive oil and cinnamon sugar, and place on baking sheet lined with aluminum foil. Bake in preheated oven 8-10 minutes, until tortillas become crisp.
Let chips cool, then use as dippers for the fruit salsa. Enjoy!
