BLT sandwich with fried egg and cheese

Ingredients

• 2 slices good bread
• 2 slices bacon
• 1 slice Monterey Jack cheese
• 1 tbsp mayo
• 2 slices tomato
• 2 leaves Bibb lettuce or handful of fresh spinach leaves
• 1 tbsp butter
• 1 egg

Directions

1. Cook bacon until crisp. Set aside on paper towel to drain.
2. Set up the sandwich by spreading 1 piece of bread with mayo, then top with cheese, lettuce, tomato, and bacon.
3. In small skillet, melt 1/2 tbsp butter over medium heat.
4. Fry the egg, flipping over when the bottom side is set. You want to keep the yolk runny!
5. Top the sandwich with the egg and other slice of bread.
6. Add remaining 1/2 tbsp butter to skillet to melt, then add sandwich. Cook on each side 2-3 minutes over medium heat, until the bread is golden brown.
7. Cut in half and enjoy!
