beer-marinated grilled chicken

Am I the only person that buys a package of chicken breasts and then has no clue what to do with them??  Please tell me I'm not.  I mean really, it's embarrassing that I'm a self-professed food maniac, I have a food blog, I look at tons and tons of recipes a day, and I still stare stupidly at a package of chicken, without an idea to save me.  Luckily in the summer, the grill comes to my rescue and I at least know how to cook it, but unluckily I'm still not quite sure what to do with it before it goes on the grill.  

Something about the ingredient list of this recipe told me right from the start that this was going to be a winner(winner, chicken dinner....sorry I had to).  How can a recipe with beer, not be a winner?  I'm no scientist, but I'm guessing the beer in the marinade works to keep the chicken moist while the paprika, dijon, onions, and garlic give it some great flavor.  How did it turn out?  "Epic" is the word Marc used.  We've even made it multiple times because it's so good.  Paired alongside with some roasted or grilled new potatoes and some corn on the cob you basically have perfection.  Now I just need someone to ship me some Iowa sweet corn and I'd have the ideal summer meal on my plate.  
Beer-Marinated Grilled Chicken

makes 4 servings


1 can or bottle of beer (I used a Pale Ale but I think any kind could work)
3 tbsp olive oil
3 tbsp dijon mustard
1 tbsp paprika
1 tsp salt
1/2 tsp ground black pepper
6 cloves garlic, minced
1 small white onion, thinly sliced
4 boneless, skinless chicken breasts


Directions:


Combine beer, oil, mustard, paprika, salt, pepper, and garlic in bowl, and stir to combine well.  Add onions, then in a sealed container, combine with chicken.  Let marinate in refrigerator for at least 6 hours, up to 24.  Discard the marinade and grill on preheated grill until juices run clear, about 6 minutes on each side, depending on the thickness of your chicken.  Enjoy!!
