Things I am loving right now:
1. Marc and I's new apartment.
3. My cute hot new road bike.
4. My new pillows.
5. Any recipe that doesn't require me to turn on my oven.
Things I am not loving right now:
1. Studying for boards. Boo.
2. Unpacking and reorganizing my life.
3. Constant talk about the weather.
4. Missing my friends who are now scattered all over the country.
5. The fact that I have no more of these avalanche bars. They went way too fast.
p.s. I have no clue why they're called Avalanche Bars. I just do what I'm told.
Avalanche Bars
from cookies and cups
1 (12 oz) bag white chocolate chips
1/4 cup creamy peanut butter
3 cups Rice Krispies
1 1/2 cups mini marshmallows
1/2 cup semi-sweet chocolate chips
Directions:
Lightly grease 8x8" baking dish. Set aside.
In large, microwave-safe bowl, melt the white chocolate chips for 1 minute. After 1 minute, stir, then microwave in intervals of 30 seconds, stirring between intervals, until completely melted. Once melted, add the peanut butter and stir well to combine. Add the Rice Krispies and then let cool for 10 minutes.
After 10 minutes, add the marshmallows and chocolate chips and stir to combine.
Press the mixture into the prepared pan and let cool completely before cutting. I put mine into the refrigerator for about an hour before cutting. Cut into squares and enjoy!

Those look delish. Maybe they're called avalanche bars because once you start eating them, it's all down hill from there until they're gone.
I like recipes that is fast and easy too! Not using the oven will be a great bonus!
These avalanche bars looks so yummy, just "mountains" of sweet treats...
